I'm allergic to cow's milk but I can have this stuff. DELICIOUS. Like I don't have enough words to express my love for this food. It's not ridiculously goaty tasting or anything.

If it helps, I usually make it with earth balance non-butter (the soy-free kind in the red tub) and almond milk. I've also tried mixing in a little chevre (soft goat cheese) and it's quite good (I enjoyed mixing just a little sour cream into my mac & cheese as a kid and it kind of reminds me of that).

My daughter was recently diagnosed with IBS, so we have been trying dairy alternatives for her Mac and cheese, because when you're 8, a diagnosis like that is hard. So I try to find particular things that she always enjoyed once in a while to keep some special things in her diet. This is one of those things that you just gotta try. I love trying new things and this was worth it. I love the goat milk taste and the cheesy flavor! There is a good amount of cheese in these packets and it doesn't clump.
